Podhale has its oscypek and bryndźa, Podlasie has its Korycin cheese, while the land of Lower Silesia is famous for Lutomierz cheeses made in the foothills of the Owl Mountains. The local and family-run manufactory in Lutomierz produces cheeses that include unpasteurized and pasteurized cow's milk, microbial rennet, uniodized salt and herbs or vegetables (including cumin, fenugreek, walnut, bear garlic, garlic, cranberries). The plant's specialty is young, not ripe rennet cheeses (that is, soft, easy to cut, with a mild aroma and aftertaste of added spice). The composition is simple, because simplicity and tradition are honoured by the owners of this pearl of Lower Silesia - the Pasternak family has been making cheese since 2004. At first, it was produced in small quantities, but their high quality and numerous awards and accolades quickly contributed to the establishment of a small, home-based business.
The cheese factory is located in a farmhouse whose history dates back as far as the second half of the 18th and the 19th centuries. The original barn and barn with mangers and sandstone columns have been preserved here. The entire outpost is called Zagroda Pasternak - it is no longer just a place where acclaimed cheeses are made, but a certified culinary education space belonging to the National Network of Educational Homesteads. The farmstead's cheese-making facility in Lutomierz invites children, teenagers and cheese lovers to participate in cheese-making workshops combined with tasting products from the farm, while the local country store also offers other natural products: including all kinds of dairy products, vegetable pickles, sourdough, jam or syrups made from pine shoots and elderflowers. Another specialty of the place is a salad made from parsnips grown here (named after the owners).
Good news for lovers of cheese and organic food: every third Sunday of the month, in the afternoon, a Healthy Food Fair Straight from the Farmer takes place on the grounds of the Lutomierz Cheese Factory. Proximity to nature, contact with animals, return to agricultural traditions, tastings of what is local and natural - this is an interesting proposition for a trip destination for everyone, regardless of age.
